MIRACLE-MARINATED GRILLED FLANK STEAK

Beef has been on my taboo list for several years, though I do occasionally enjoy one of our delicious dry-aged rib steaks.  I'm trying to eat more seafood, always wild caught, but even that can be risky because of mercury and pollutants.  Imagine how thrilled I was to learn of the health benefits of eating grass-fed beef.  It's   actually good for you.  It lowers cholesterol and has less fat and calories than grain-fed beef.  Amazingly, it contains Omega 3 fats -- the good fats -- because they're in the grass that the cattle eat.  And because they graze freely instead of being penned up, they're healthier.  But I never expected to find grass-fed beef in our little Southeast coastal town of New Bern.

I had no idea that grass-fed beef actually lowers cholesterol! That's pretty amazing! Your steak looks perfectly cooked, juicy, and delicious!

Sounds wonderful Judy. I'll be on the lookout at our local supermarket for grass fed beef. They just might surprise me by having it.

Sam, I would be surprised too. Normally, supermarkets don't carry grass-fed beef. You have to do a search in your area: farmer's markets, yellow pages, farms. Ask around. If there's a source in your area, it will turn up.

Judy,
1st time to your website, but have run into a bit of a snag. Your new "signature" dessert, appears to be incomplete. Imagine trying to make the cream cheese brownie cupcakes and not being able to understand what to do with all the eggs! I know you are not a professional and I am trying to be thankful, but that are the problems with this type of website.
1 of the eggs is in the cream cheese mixture, I am assuming the others are in the chocolate cake batter?

Hi Anonymous. Thanks for your comment. I'm assuming you are referring to my cream cheese brownie cupcakes or squares recipe. I copied the directions from the website:
"In small bowl, beat cream cheese, 1/3 cup sugar, 1 egg and a dash of sea salt using low speed of electric mixer. Set aside. In a large, covered microwaveable bowl, heat the butter and water on high till butter is melted. Stir in chocolate and coffee granules and let sit till chocolate dissolves. Add flour, cocoa, and brown sugar, beating on medium speed of mixer till well combined. Stir in remaining 2 eggs, yogurt, baking soda and 1/2 tsp. sea salt and mix on low speed just till combined." That is the batter. Then proceeed to cupcakes and brownies for finishing instructions. The batter is the same whether you make cupcakes or brownies.
