Formerly from Long Valley, NJ, I'm now living in historic New Bern, on the beautiful North Carolina Coast, with my husband of many years. I write the food column for our neighborhood newspaper, and love tweaking recipes to make them healthier.  As a pre-diabetic, I mostly avoid box mixes.  Instead, I incorporate whole grains and sugar substitutes into recipes and do my best to make them lower-fat without destroying the taste and texture that we Americans are used to.  However, you will find some recipes on this site that are not made healthier (think chocolate chip cookies, angel food cake).
