CLASSIC SOUTHERN CORNBREAD
I have fallen in love. No, really. Deeply in love. At my age, I didn’t think it was possible, but it happened. My iron skillet has made me the most wonderful cornbread and I never ever want to leave it. I’ve promised to remain faithful to the end. No more dallying with corn muffins. This is the real thing.
You, too, can fall in love. If you don’t own an iron skillet, please buy one and try this recipe.
(Please note: the links above will bring you to my other blog, The Bear Cupboard, where I posted my version of Oprah's chef's southern cornbread.

The cast iron skillet is the key - crunchy outside and buttery corn on the inside.
Okay, now I want cornbread!
Have a great weekend Judy!
ooooooooooooo Judy...this looks simply amazing!
Did you try Oprah's version or The Bear Cupboard recipe? Your photo looks SO good!
Linda, the recipe on The Bear Cupboard is my version of the one from Oprah's chef. Hope that's not too confusing.
Thanks for visiting my blog. You have a nice space here. And regarding your doubt , I use raw banana and NOT ripe one.
Judy, I have an heirloom iron skillet from my great-grandmother's kitchen; which her cook, Aunt Carrie used several times a day. And I can't wait to fix this awesome classic cornbread in it. I know that Carrie would be pleased.
Many thanks...
This looks good enough to eat :-). I have 3 cast iron pieces - two skillets and a dutch oven. I really couldn't cook without them. I've had them since I was married, so I guess they are approaching vintage status. I love your blog and will be back often to see whats going on. Have a wonderful day. Blessings...Mary

Sophie, thanks for asking. His spirits are up and we are all waiting to get to Phoenix in March where he'll have surgery.
Looks wonderful! My mama always made hers in a skillet, so I think that's the way it should be done :)
I've never made homemade cornbread, but it sure sounds great with a piping hot bowl of chili right now amidst this little snow storm that we're getting in SC today. Stay warm! Roz
